Gaz (Persian: گز) is an Iranian nougat that originated in the Isfahan region. It is widely known as Persian Nougat in American and European countries. It is made from egg whites, sugar, pistachios and/or almonds, rosewater, and (traditionally) psyllid honeydew collected from Persian manna. It has a mild laxative effect, traditionally used for children.
